Vegan Ceviche

Also known as Mermaid Food – because fishes are friends!


You will need:

3 cucumbers

10 Roma Tomatoes

1 Head of Cauliflower

1 Bunch of Cilantro

1 Red Onion

10 oz Fresh Lemon Juice

A few avocados

Salt to taste

Some chips (I used organic blue corn chips)

Hot sauce if you like


Here’s how its done.

Start with a large bowl.

Wash the cauliflower and separate the head into smaller pieces to boil. In a separate pot, boil the cauliflower until it is soft (10-15 min depending on the size of the pieces). Once it is cooked, strain the cauliflower, let it cool, and break into smaller pieces, like this:


As the cauliflower continues to cool, wash and peel the cucumbers, then quarter them, cut the seeds off and dice them. Throw them in the bowl.


Then cut the top and bottom ends off the tomatoes , quarter them, and dice them. Throw these in the bowl too.


Next, peel the purple onion and dice it up. Here’s a simple way to do it:


Add the diced onion to the bowl. Juicing the lemons is next. I prefer fresh lemon juice, if you don’t have lemons, limes work too. In this recipe, I used 8 small lemons.


Add the lemon juice to the bowl, sprinkle some salt in the bowl and mix it well.


Wait a few minutes, then mix everything again, coating each ingredient in the lemon juice. Then, add the cooled cauliflower to the mix and gently mix it in to soak up the flavor. Put it in the refrigerator for 1 hour.


As you are waiting for the mixture to get cold in the fridge, there are a few things you can do…

  • Wash and chop the bunch of cilantro.


  • Clean the kitchen.
  • Get some chips. (Its ok to run to the store if you forgot to get these).
  • Drink some water.

Oh look! The hour is up!

Add the chopped cilantro to the bowl and mix it up, taste it and add more salt if needed.


I like to do the avocado last, and serve it on the side so that it is fresh and doesn’t turn brown. Dice the avocado, and sprinkle it on top of your dish.

You are ready to eat! Hopefully you invited your friends or family, as this recipe will serve 6-8 people.


This ceviche will last a few days in the fridge, after a day or two, it will be extra delicious because all the ingredients will have had time to marinate into each other! But be sure to eat it within 4-5 days or it might go sour!
