Black Bean Brownies

It might sound funny at first, but wait till you try these delicious fudge-like brownies. This is a flour-free recipe, and will have you wanting to eat more beans in a heart-beat! The featured photo is the combination of dried fruits and nuts I used for this recipe. Yum!

Combine wet ingredients in a food processor and mix.

4 cups Black Beans (cooked and drained)

3 TBSP Ground Flax + 1/3 cup Water (mixed together in a bowl first)

3 TBSP Oil

1 tsp Pure Vanilla Extract

1/2 cup Sugar

4 TBSP Maple Syrup

Mix the following ingredients in a separate bowl:

3/4 Cup Cocoa Powder

1/4 tsp Salt

1 1/2 tsp Baking Powder (be sure its Aluminum free)

Place dry ingredients into the food processor and process until fairly smooth.

 

Add these optional/interchangeable ingredients to the blended mixture (but do not process them)

1 cup Chocolate Chips

1 cup Walnuts (chopped)

1 cup Dried Fruits (chopped)

1/2 cup Pepitas or Sunflower Seeds

2 TBSP Oats (as needed if the mixture is too wet) <<OMIT if Gluten Free>>

Lightly grease a 13″x9″ pan and spoon the mixture into the pan until it is evenly distributed.

If you’d like, top with more chocolate chips and nuts for a nice aesthetic.

Bake at 350 degrees for 45-55 minutes.

Let set for about 30 minutes before serving.
