Heres the recipe for my VEGAN (dairy free) Mac+Cheese…

4-5 Cloves of Garlic. Crushed and Sautéed. (or Raw if you want to make this a raw cheese!)

1 1/3 cup Raw Cashews (soaked overnight)

1 cup H20

1/4 cup Nutritional Yeast Flakes

4 TBSP Lemon Juice

2 tsp Paprika (or more if you want a darker cheddar color)

1 tsp Turmeric

1/2 tsp Cumin

Dash Cayanne Pepper

Salt and Pepper to taste

Blend all ingredients in a high speed blender until smooth and creamy.

You can use this cheese as a dip, toss it with noodles for Mac+Cheese, or to top off your tacos!

*I especially like it with pasta, mix half cheese and half marinara as the sauce. Here it is with ravioli, mixed with some sautéed garlic, kale and mushrooms.*IMG_4649.JPG
